Squirrel’s Trading Company first started as a gun repair shop around 1995 in Bedford, Kentucky repairing and reselling firearms. Prior to starting the business I always had an interest in cooking and being new to cooking, I was quite fearful some foods would come out undercooked. I wanted cookware made domestically but had to travel far to find what I was looking for. My first purchase was a Lodge 8” Camp Dutch Oven with feet. Then my collection evolved to creating my own stack. Today I have many Dutch Ovens for cooking and for resale. Throughout the years, I have used my Dutch oven indoors and outdoors. One of my recent meals was a chicken cooked in a Dutch oven over an open fire. The lids can be used as skillets. I wanted to share the experience with selling Dutch Ovens and offering advice. My product line expanded to including the Potjie pot and soon the Gypsyware collection. Since I evaluate the products I sell, here is what I found out. If you like the seasoning pushed through your food without it just staying on the top then the Dutch oven will fit the bill perfectly. The Dutch oven is safer to use than a pressure cooker because the heavy lid allows pressure to build up inside the pot with the constant basting of the food; the seasoning is pushed through the food. I have always enjoyed many a meal prepared in a Dutch oven. Though you may not be like me, but I have a fondness for Dutch Ovens with feet. I am very excited to offer a collection of Potjie pots and Gypsyware Cauldrons. The method of cooking in them is different from the Dutch oven because the lid isn’t as heavy. The Potjie pot uses a circulation method of heating food. I am learning how to prepare meals in these pots and have enjoyed fixing breakfast using the ½ kettle. I expanded my collection of Potjie pots to include the ¼ kettle, ¾ kettle, #1 and #2 Kettles to try for cooking. Recently I used the ¾ kettle for cooking a game hen. It slow cooked for an hour and a half and it came out tender and tasty. At Squirrel’s Trading Company, I look for ways to cater to the consumer. My goal is keeping food hot from the fire to the table without cooling down before it is served. Various pots are offered to cater to your creativity. I hope you enjoy these pots as much as I do.
